Particularly older Americans who can remember the no fat fad of the 90s, are reticent to give up their “heart healthy” oils because of the relentless propaganda. In “Fiat Food” by Matthew Lisiak he points out to the irreproducibility of the “diet heart hypothesis” connecting saturated fats to heart disease and heart attacks. Actually, when they were trying to prove their hypothesis that diets higher in saturated fats would lead to poor health outcomes, they found the opposite, those with higher saturated fat consumption had less heart disease and heart attacks than those who didn’t. We were lied to by the sugar industry for 70 years, blaming beef for the inflammation of sugar. FDA still claims that canola oil is healthier for you than beef tallow (how I am not sure because they admit that they got the saturated fat story wrong). My point is propaganda, particularly regarding health related diet choices, is very sticky. People believe their doctor, and their government, and really they should trust neither. Everyone needs to look at the Tufts Food Compass and think long and hard about how anyone with a nutrition degree could think this was accurate. The wholesale propagandization of American dietary choice is criminal and absolutely immoral. Tufts, FDA, et al need to be ashamed because they are either the most corrupt or most imbecile group of people that ever lived. The gaslighting is extreme.

Here in California the cattle industry has really declined, thanks to methane gas activism. We have read that an increasing amount of US beef consumption comes from Brazil now. I hope there are still enough cattle in the US to resurrect the tallow industry for healthy cooking.
In direct answer to your question, beef tallow is largely a waste product -- suet. I use avocado oil. But did you know it can take up to 70 gallons of water to grow a single avocado? Unsustainable, and impossible to implement at scale. Avocado oil is also very expensive. So is coconut oil, though I am unsure of its water footprint.
Additionally, where do you think essential fertilizers to grow plant crops will come from if not from livestock manures? More synthetic fertilizers, made from natural gas, that destroy soils and accelerate erosion? GMO crops dependent on glyphosate and pesticides are sickening vegans -- only with livestock can we feed the microbiome of both the soil and our guts.
Agricultural fertilizers have been essential throughout human history, and always will be. The question is whether, like animal care, we relegate all our food production to industrial monopolization.
I'm sorry that thousands of years of animal husbandry is "abhorrent" to you, though I very much appreciate your compassion -- I slaughter my own animals here, as a moral duty to limit their suffering. However, they would have no life at all if we eliminated them from the food chain -- we keep our breeding ewes and cows into old age, and treat them extremely well. I am not a CAFO.

There are also only so many cows one can purchase from the boys from Brazil.
My understanding is that Cal beef is also suffering from sales of feed to China et al -- driving up local forage costs for farmers.
McDonalds made the change after pressure from the vegans. Final tipping point.
