I was a meat manager and cutter for 48 years. I was always aghast at what companies were trying to foist upon the public. I’ve been following the downward trajectory of fake meat and your article made my day. May Bill Gates experience the downside of Upside Meats.
Jordan Peterson and his immune disorder come to mind when I think of people giving up meat. Peterson gave up everything else and has been sustained by beef and water and has regained his life.
I suspect some grocery stores trying to recoup their own costs in this time of rapid inflation are trying to pass off fake chicken as chicken salad. I recently picked up what was labeled as dill chicken salad at a local store that provides many vegan and organic foods. But one very disappointing sandwich later, I threw out the product. The uniformly cubed, tasteless, and oddly textured "chicken" had been disguised by dill and mayonnaise, butwas just awful!
While I do eat meat but not every day, I have eaten the Beyond Burger and the Impossible Burger. I think both are decent but not as a meat substitute. They do have some advantages, like making homemade meatballs ( I'm Italian) for the vegetarian crew. They meatballs come out quite good as you can get the texture right. In making meatballs, texture is foremost. The taste can be easily adjusted with spices and cheeses. I do like them but to me ,they are not a substitute, just something different. We'll see what they morph into..................

I've heard similar testimonies from others.....

Not synthetic chicken -- WAY too expensive to make. Could have been a meat substitute, though they aren't cheap either!
I think they were trying to get rid of it...
Mighta' been alley cat....
