I was a manager at the headquarters of the Agricultural Research Service (ARS), which did all the USDA's in-house research. One of my colleagues managed all the USDA's human nutrition research. He didn't eat organic and little if any meat. He was often sick, but he refused to consider that his diet may have been a contributing factor to his poor health (compared to my health even though I was much older). He was a smart man, but arrogant to a fault, traits that I oftentimes saw in academic professionals and government bureaucracts. Neither of these tribes are to be unconditionally trusted!
